Stuffed Portobello Mushroom
Looking for a great appetizer to share with friends? Give this vegetarian option a try.
It starts with a Portobello mushroom that is stuffed with a flavorful mix of artichoke hearts, sun-dried tomatoes, spinach, feta and mozzarella cheese, then baked until creamy. It is finished with fresh basil and served over a bed of spring greens dressed in a light vinaigrette. $7.99.
Enlightened Spinach Salad
This salad is packed with flavor and nutrition. Fresh spinach is tossed with dried cherries, apples and candied pecans. It comes with feta cheese but ask to have it without if you are looking for a vegan delight. $9.49.
Jerk Chicken Hoagie
A spicy jerk seasoning dresses the chicken to give this hoagie sandwich a little kick. It also has onions, mushrooms, green peppers and pineapple.
Everything is grilled at once so the flavors blend together. It is finished with a pesto mayonnaise, Roma tomatoes, feta cheese and spinach. Go for the whole sandwich for $9.49.
Thai Dye Pizza
This is a great example of the novel flavor combinations you can find at Mellow Mushroom.
Curry chicken is grilled and then joins mozzarella, tomatoes and onions on this pizza. After it is baked, cool cucumbers, fresh basil and a dressing of Thai chili sauce are added for the perfect finish. A small is a good size for a meal for one at $12.49.
Mellow Mushroom’s History
The first Mellow Mushroom was opened in Atlanta, Georgia in 1974 by two Georgia Tech students, and one from University of Georgia. The original location was previously a liquor store. The restaurant was very popular and soon needed new locations near Georgia Tech to accommodate demand.
Franchising began in the late 1980’s and the chain has been experiencing steady growth since, largely in college towns. As of 2016 there are 120 locations in the United States.
Fun fact: The Mellow Mushroom mascots were designed by Buddy Finethy and Dusty Griffin. They include: Mel O. Mushroom, Dude Shroomington, The Wizzard, Melody Mushroom and the three little ones, Por, Toe and Bello.
