Potbelly History
Peter Hastings and his beloved wife ran a charming antique store for years in Lincoln Park, Chicago. In 1977 they decided to sell sandwiches to their customers and in no-time they became a local treasure. Live music and the antique themed atmosphere were all a part of the charm and draw of the original location of Potbelly Sandwich Shop.
The name Potbelly came from an actual antique potbelly stove leftover from the founder’s antiquing days.
In 1996 the restaurant changed hands, with new ownership focused on expansion. Eventually the company went public in 2013. From humble beginnings, Potbelly has become a household name in the localities served by this growing chain.
