Blue Mountain Chicken Sandwich
Chicken breast is marinated in a tangy lemon sauce and grilled. It is accompanied by crispy bacon, creamy Swiss cheese, roasted red peppers, and fresh lettuce. The bun is an Asiago ciabatta bread dressed with a special Safari sauce. $13.49.
Caribbean Coconut Shrimp

Rainforest Cafe’s History
The first Rainforest Cafe was opened in the Mall of America in Bloomington, Minnesota in 1994 by Steven Schussler. Before opening the restaurant, Schussler spent years developing his own home into a prototype for the tropical themed restaurant.
The first location was financed by Grand Casino Inc. under the leadership of Lyle Berman. By 1994, Rainforest Cafe Inc. was formed which went public in 1995 on the Nasdaq. There were 6 locations by 1997 and the chain was sold to Landry’s Restaurants Inc. in 2000.
There are 45 Rainforest Cafe locations across the globe as of 2016. A commitment to expanding to both retail and educational outreach has continued to maintain the popularity of the chain.
