After discovering that there’s nothing worse than getting used to delicious East Coast subs and then moving someplace where they don’t exist, James and Bill came together to recreate the sub sandwich experience they were familiar with in New Jersey in their new home in Milwaukee. It didn’t take long for the local expats of the East Coast to find them, and then their customer base expanded rapidly throughout Wisconsin.

Cousins Subs’ History
First established in 1972 in Milwaukee, Wisconsin, Cousins Subs was the brainchild of two cousins, James Sheppard and Bill Specht. They had spent a remarkable amount of time trying to find an acceptable sub sandwich shop in Milwaukee, an impossible task after the precedent set by their time spent living in New Jersey. Their first restaurant was opened at the corner of Silver Spring Drive and 60th Street and coincided with their joining forces through a local bakery to get custom bread for their shop.
The first they were to attract were those who had previously lived on the East Coast and craved a taste of home, but it didn’t take long for the locals to discover how delicious their subs were and become huge fans themselves. Since their inception, they have grown to own over 95 stores throughout Wisconsin, with two being opened in Arizona.
