Drew Harre, founder and creator of the restaurants signature bread recipe, opened the first Cosi in Paris, France in 1989. Years later, two brothers — Shep and Jay Wainwright — discovered the Paris location and wanted to open their own in the United States. The first American location opened in New York City in 1996.
