Pollo Tropical is a restaurant chain that specializes in Caribbean cuisine. It was started in 1988 with a chicken recipe based off of Latin American cuisine. There are more than 140 locations throughout Florida and Georgia. There are also several franchised locations throughout South America.
They are well known for their marinades, mojo roast pork, and fire grilled chicken. Some of the menu favorites are marinated grilled chicken, fried yuca, sweet plantains, and sides like corn casserole and black beans and rice.

Pollo Tropical does not offer a breakfast or brunch menu but a few of their items already on the menu would make a delicious breakfast. There are also items that could be designed into breakfast dishes.
The stores do not open until 10:30 but opening at 7 AM Monday through Saturday could prompt customers to come try the Peri-Peri Breakfast chicken bowl, Peri-Peri Breakfast chicken wrap, the Peri Peri Breakfast chicken biscuit. A Chipotle chicken bowl would also be great with eggs as well as sweet plantains,fried yuca, and sweet rolls.

Pollo Tropical’s Most Popular Breakfast Foods
Sweet Plantains: This is on the regular menu, however it would make a delicious morning treat. They are ripe, sweet, and cooked to a golden caramelized finish. It would make a delectable breakfast item (especially paired with another menu item listed).
Fried Yuca: Also known as cassava, yuca is similar to a potato but has a tropical sensation. A great breakfast versions would be to fry the yuca like potatoes and make a hashbrown type dish. Yum!
Peri-Peri Chicken Breakfast Wrap: This spicy but very flavor pepper of peri-peri is very popular on the regualr menu. Adding it into a pulled marinated chicken and scrambled egg wrap would pack a punch with heat and herbs.
Peri-Peri Chicken Biscuit: Because the peri-peri chicken is so popular on the menu, why not add it to a fluffy biscuit? It’s breakfast!
Chipotle Chicken Breakfast Bowl: This is regular menu item with but with marinated Chipotle chicken, fluffy scrambled eggs, and vegetables it could be a perfect breakfast bowl for the menu.
Peri-Peri Chicken Breakfast Bowl: This would essentially be the same as the Chipotle chicken bowl but using the spicy peri-peri to get the same marinating flavor that would be in the breakfast wrap or chicken biscuit.
